Tommy DeVito cutlets recipe
The recipe for DeVito's signature chicken cutlets is as below, according to Rao's.
Ingredients
- 1 cup olive oil
- 1 lb. chicken breast
- 2 eggs
- Pinch of salt, pepper
- 2 tablespoons grated parmesan
- 2 cups Italian season breadcrumbs
- 2 jars marinara sauce
Directions
- Slice chicken breasts in half horizontally, and pound with a mallet until thin.
- Beat eggs in a bowl.
- Add salt, pepper and 1 tablespoon of parmesan into the egg wash.
- Add breadcrumbs to a separate bowl.
- One at a time, place chicken in egg wash and coat fully. Add chicken into breadcrumb mixture, and coat all sides.
- Heat olive oil in a skillet over medium heat, and fry cutlets until golden brown on each side.
- Once cooked, remove from pan and allow chicken to drain on paper towels.
- In a medium saucepan, pour in marinara sauce and simmer on medium low heat.
- Plate cutlets and pour 1/2 cup of marinara sauce onto chicken.
- Serve with parmesan on top.
